Ingredients

G 50 saddle of hare carpaccio
G 100 wild herbs
G 10 butter
G 280 carnaroli rice
G 10 juniper oil
G 2 chilli flakes
G 4 cocoa beans
Salt and pepper to taste

Preparation

  • For the herbal cream, cook in boiling water for 3’ a mix of wild herbs previously washed and blended until a smooth and homogeneous cream is obtained.
  • For the risotto, roast the rice dry, add the butter and blend with white wine. Cook the rice with plenty of boiling water, in the last 3’ cook the risotto with the cream of wild herbs. Whip the risotto with juniper oil, chilli pepper and herbal cream if necessary.
  • Flatten the risotto on top of the crumbled cocoa beans and raw hare carpaccio.
