Ingredients

kG 2 elk backstrap (loin)
mL 15 kosher or sea salt
mL 15 crushed black pepper
mL 250 barbecue sauce
mL 500 coleslaw (optional)
N 1 loaf cornbread (optional)

Preparation

  • Preheat the smoker to 150°C. Season the loin with salt and pepper, then place it in the smoker and cook for 2h.
  • Remove the meat from the smoker and cut it into roughly 3 cm cubes. Coat the cubes evenly with barbecue sauce.
  • Arrange the cubes on a baking sheet and return them to the smoker for an additional hour of cooking. By this time, the meat will be flavorful, with a crispy crust on the outside and incredibly tender inside.
  • Serve the burnt ends with coleslaw and cornbread or accompany them with any side dishes you prefer.
