Ingredients

G 250 wild boar sausage (approx. 2 sausages)
N 12 shrimp peeled and deveined
N 12 scallops shelled
G 225 spaghetti
mL 250 tomato sauce
mL 125 dry white wine
N 1 small bunch of black kale
N 2 cloves garlic
mL 5 chilli flakes
N 1 bunch Basil
Salt to taste
Extra virgin olive oil to taste

Preparation

  • Bring a large pot of water to boil with a tablespoon of sea salt.  Add the pasta to the boiling water and stir frequently and cook to al dente check after 7-8’.
  • Heat a large frying pan on high heat and add a little olive oil.
  • Break up the wild boar sausage and remove from the casing and add to the pan. Stir after 1-2’ and add the scallops and shrimp, then add the chopped kale, garlic and chill flakes.  Season with salt.
  • Deglaze with the white wine and add the tomato sauce.
  • Drain the pasta and add to the frying pan, and toss to coat the pasta in the sauce taste for seasoning and add salt if desired. Transfer evenly to bowls and serve with the basil.
