Ingredients

N 8 slices of wild boar marrowbone
mL 750 beer
N 2 white onions
N 2 cloves of garlic
N 2 carrots
N 2 apples
G 60 butter
N 3 sweet potatoes
Juniper berries to taste
Rosemary to taste
Cloves to taste
Flour to taste
Extra virgin olive oil, salt and pepper to taste

Preparation

  • Clean the onions and carrots, leaving aside a little for the stock and a little for the meat. Clean the sweet potatoes, leaving them aside for the side dish.
  • Put the wild boar marrowbones in a bowl with the beer, apples, carrots, garlic, a pinch of salt, the juniper berries and a sprig of rosemary; leave to flavor overnight.
  • Prepare a classic stock with carrots and onions, beef bones and cloves, simmer for about 60’.
  • Drain and flour the meat, place it in a saucepan with oil and butter.
  • As soon as it is browned, add the onions and carrots cut into cubes, simmer with the beer and continue cooking, adding the meat stock.
  • Cook the sweet potatoes in the microwave, piercing them with a toothpick and covering them with cling film; let them cook for 10’. Once cooked, make a puree.
  • Compose the dish, placing the sweet potato puree, some vegetables and the wild boar marrowbones with their sauce at the base.
