Ingredients

N 4 chamois meat skewers
G 300 fresh fava beans
G 100 Pecorino
N 1 lime
Ginger to taste
Grated bread flavoured with salvia, thyme, garlic, salt and pepper to taste
Extra virgin olive oil to taste

Preparation

  • Clean the fava beans, place them on a plate and sprinkle over them some flavoured grated bread.
  • Season the meat skewers with lemon zest and grated ginger, grill them on a high flame.
  • Transfer the grilled meat to a serving plate and top with some pecorino shavings and olive oil.
