Ingredients

N  2 goose breasts (approximately 1,5 kG)
N 2 eggs scrambled
mL 500 Italian bread crumbs
mL 250 all purpose flour
Salt and pepper
N 1 lemon cut into wedges
G 500 arugula and spinach
mL 50 white wine vinegar
mL 150 olive oil
N 1 tablespoon Dijon mustard
Parmesan cheese to grate as a garnish
Oil for frying

Preparation

  • Thinly slice the goose breast horizontally in 5mm flat slices.
  • Pound with a meat mallet until the slices flatten to 2mm-3mm in size. Season with salt and pepper and dredge in the flour.
  • Dip the floured goose meat in the egg then coat in the bread crumbs. Repeat for the rest of the goose meat.
  • Heat a large pan with 500 mL of vegetable oil to 180°C. Fry the goose for 2-3’ per side until golden brown. Remove from the oil and place on a tray with kitchen towels to absorb any excess oil, and season with salt.
  • Mix the salad greens with the oil, vinegar and mustard. Season with salt and pepper.  Add the schnitzel to a plate and serve with the salad and lemon wedges. Grate fresh parmesan cheese on top and enjoy.
