Ingredients

G 480 ground wild boar
G 10 salt
N 8 bitter oranges
N 1 dandelion root
G 200 chestnuts
N 2 bay leaves
Salt to taste
Sausage casing to taste
Nutmeg and pepper to taste

Preparation

  • In a bowl season the ground wild boar with nutmeg, pepper and salt.
  • Form sausages of 240 G each. Put each sausage with 2 skewers.
  • Wash the chestnuts. Cook the chestnuts with the bay leaf in a saucepan with boiling water. Once cooked, peel the chestnuts.
  • Peel the oranges and cut them into 4 pieces. Centrifuge the oranges and bring the liquid in reduction with ¼ of previously peeled dandelion root.
  • Cook the sausages on a hot plate or hot coals. Divide the sausages in half while keeping the sticks.
  • Place the bitter orange sauce, the hot sausage on the plate and the chestnuts next to it.
